Potato Lefse
(Scandinavian wafer thin bread)

3 cups cooled mashed potatoes
3 cups sifted flour
1 tsp salt
1 Tbsp sugar
2 Tbsp shortening
2 Tbsp cream

Mix all ingredients well together. Use one Tbsp at a time, rolling
thin on a floured surface. Bake on both sides on a griddle. Cool
on dish towels, keeping separated from one another.

To serve: Spread with butter and sugar and roll up. Keep unused
lefse rolled up in a towel.
