Fluffy Pancakes
1 cup flour 1 tablespoon wheat germ 1/4 teaspoon salt 1 tablespoon sugar 1 tablespoon baking powder 1 egg 1/2 cup milk 1 teaspoon vanilla extract 2 rounded tablespoons fat free yogurt 1 1/2 tablespoons melted butter
One apple, pear, or peach cut into cubes (optional) raspberries, blueberries, strawberries, cherries (optional) raisins (optional) sliced banana (optional) pecans, Walnuts, almonds (optional) cinnamon and nutmeg (optional) 1 tablespoon cocoa powder (optional) chocolate, peanut butter, or butterscotch chips (optional) any other flavoring or extract (optional)
Sift together the dry ingredients.
Beat eggs, milk & yogurt in another bowl.
Pour the egg mixture into the dry ingredients, beating with a whisk. Add the optional items, carefully mixing. Batter will be thick.
Cook on a griddle or frying pan, as with any pancakes.
Makes 7 or 8 small pancakes.
