1 1/2 cups flour
3 tablespoons sugar
2 teaspoons baking powder
3 tablespoons melted butter
1 cup (or more) milk
2 teaspoons vanilla extract
Whisk flour, sugar, and powder together. In a separate bowl, mix
eggs, butter, milk, and vanilla until homogeneous. Rapdily add
wet ingredients to dry. Heat a seasoned cast iron griddle (on
medium low heat) until a drop of water sizzles gently on the surface.
Briefly butter the griddle before each pancake. Ladle out 1 serving,
turn when majority of surface is bubbly. Serve warm, with fruit
and/or maple syrup.
