Pancakes

1 egg
1 cup all purpose flour
3/4 cup milk
2 Tbsp oil
1 Tbsp sugar
3 tsps baking powder
1/2 tsp salt

Combine dry ingredients in a bowl. In a separate bowl, Beat egg
slightly, add milk and oil. Make a "well" in the center of the
dry ingredients. Pour in the liquid ingredients. Mix just until
combine, batter may be lumpy. Overmixing results in tough pancakes.
Cook on hot griddle or lightly greased frying pan. Turn when they
just begin to bubble and bottom is golden brown. Remove when second
side is golden brown.
