Pancakes 1 1/4 cups all-purpose flour 2 1/2 tsp. baking powder 2 Tbsp granulated sugar 1/2 tsp. salt 1 large egg, lightly beaten 1 1/4 cups whole milk or half and half 3 Tbsp melted unsalted butter or vegetable oil In a small bowl, mix flour, baking powder, sugar and salt. Set aside.
In a medium bowl, mix egg, milk and melted butter or oil. Slowly add the flour mixture and mix until just moistened. Heat a griddle and add about 1 Tbsp of oil, let it get hot then pour about 1/4 cup batter for each pancake. Cook over medium/high heat until bubbles form then turn and cook the other side. Makes about 8 pancakes. These freeze well, just pop them in the toaster to reheat. For blueberry pancakes, sprinkle fresh blueberries on top of the batter before turning them.
For apple pancakes, saute some finely chopped apples in unsalted butter, cool then add to the pancake batter, cook as directed.
