Pancake Mix

1 1/4 cups all-purpose flour
2 1/2 tsp. baking powder
2 Tbsp granulated sugar
1/2 tsp. salt
1 egg, well beaten
1 cup milk, may need a little more to thin the batter
3 Tbsp melted butter
Vegetable for cooking

Mix flour, baking powder, sugar and salt in a large bowl. Set aside.
In a medium bowl, mix egg, milk and melted butter. Slowly add to
flour mixing just enough to moisten the dry ingredients. Heat your
griddle and add about 1 Tbsp vegetable oil let it get hot but not
too hot. Pour batter onto griddle and cook until you see bubbles
on top of the pancake, flip and cook until cooked through. Makes
about 8 pancakes.

For Apple pancakes, saute some finely chopped apples in a little
butter until they are nearly cooked through. Add 1/4 tsp. cinnamon
to your flour mixture. Let the apples cool before adding to the
batter.

For blueberry pancakes, add about 3/4 cup fresh berries to the
batter or sprinkle some berries on top or the pancakes before
turning them.
