Gingerbread Waffles

1 cup flour
1 1/2 teaspoons baking powder
1 teaspoon pumpkin pie spice
3/4 teaspoon cinnamon
1/2 teaspoon baking soda
Pinch salt
1/3 cup brown sugar, packed
1 egg, separated
3/4 cup buttermilk
1/4 cup molasses
3 tablespoons margarine, melted

Combine flour and spices. In separate bowl, combine brown sugar,
egg yolk, molasses, margarine, buttermilk, and enough milk for
right consistency. Beat egg white in small bowl for one minute.
Stir gently into batter. Bake in preheated waffle iron until golden
and done. Set on rack in warm oven for crisper waffles. Top with
Cool Whip before serving with syrup. Makes 2 large waffles.
