2 large eggs, separated
1 cup low-fat milk
1/2 cup nonfat plain yogurt
2 Tbsp vegetable oil, preferably canola
2 Tbsp sugar
1 tsp vanilla extract
1 1/2 cups all-purpose white flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 egg whites
Preheat waffle iron. In a mixing bowl, whisk together egg yolks,
milk, yogurt, oil, sugar and vanilla until smooth. In another
bowl, combine flour, baking powder, baking soda and salt. Add the
dry ingredients to the milk mixture and whisk until smooth.
In a clean mixing bowl, beat 4 egg whites until stiff but not dry.
Whisk one quarter of the beaten egg whites into the batter to
lighten it, then fold in remaining egg whites.
