Welsh Cakes (Picau ar y maen)
2 c flour 1/4 c margarine 2 tsp baking powder 1 tsp nutmeg 1/2 tsp cinnamon 3/4 c sugar pinch of salt
Sift together dry ingredients. Cut in margarine until mixture resembles bread crumbs (approximately!). Toss with 1/2 c currants (you could substitute raisins if needed).
Beat 2 eggs lightly. Add 2 tbsp milk and add to dry ingredients. Mix to stiff paste (dough). Roll on floured board 1/4" thick. Cut into 2" rounds. Bake on lightly greased griddle (about 325-350 deg) until golden brown and edges are firm, turn once and cook other side.
