WELSHCAKES (Griddle Scones) Quantity makes 10-12. Measures are UK Imperial.
1 1/2 oz butter 8 oz self-raising flour (baking powder already added) A pinch of salt 1 oz sugar 1/4 pint of milk or milk and water
Rub the fat into the flour till it looks like breadcrumbs, then stir in the sugar. Mix to a fairly soft dough with the liquid, and knead it lightly on a floured board to remove any cracks. Roll out to 1/2" thick and cut into 10-12 rounds or triangles. Cook on a hot griddle (or in a thick frying pan) for about 5 minutes until well risen and golden underneath. Turn and cook for 5 minutes more until the other side is browned and the centre is dry.
