Welsh Cakes

4 c. flour
1/2 c. brown sugar
1 3/4 c. shortening
2 t. baking powder
1 t. baking soda
1 t. nutmeg
2 t. cinnamon
1 t. salt
2 c. chopped nuts
1 c. white raisins
2 eggs
1 t. vanilla
1/2 c. milk

Mix spices into flour, and then mix in the rest of the ingredients.
Cut shortening into the flour. Add the raisins and nuts. Mix
together the eggs, vanilla, and milk. Mix into the flour / shortening
mixture. Refrigerate the dough over night. Put balls the size of
walnuts into an electric frying pan set at 345. Flatten slightly.
Bake 3 minutes on each side. Remove from the pan and sprinkle with
white sugar.
