Bread and Butter Pudding
Serves 4

8 slices buttered white bread
2 oz sultanas
grated rind of 1 lemon
2 eggs
3 tablespoons caster sugar
1 teaspoon vanilla essence
1 pint milk

Remove the crusts from the bread and cut the bread into 2.5 cm
squares. Place them in a lightly buttered baking dish with alternate
layers of sultanas mixed with grated lemon rind. Beat the eggs
lightly with 2 tablespoons of the sugar, the vanilla and the milk.
Pour this custard mixture over the bread and leave it to stand for
at least 15 minutes. Sprinkle the rest of the sugar over the top
and bake the pudding in a preheated oven for about 45 minutes or
until it is set and golden brown.
