Bread Pudding
1 egg, lightly beaten 1 cup milk 2 slices bread 1/2 tsp vanilla extract 1/2 cup brown sugar, packed 1/4 cup raisins 1/4 tsp cinnamon Pinch of salt
Butter a 1-quart baking dish. Cut bread into cubes. Mix eggs, sugar, salt, vanilla, and cinnamon together.
Layer bread cubes and raisins (so raisins don't all end up at the bottom). Add liquid. Press bread so that it absorbs some and isn't dry. Bake at 350F for 45 minutes to 1 hour or until knife inserted half-way to the center comes out clean.
You may want to use more raisins, or none at all, according to your own tastes. You can also add 1/2-inch cubes of apples, blueberries (or other berries), or pieces of pecan or walnuts. This is a pudding you can customize
Serves 2 - 4.
