Savory Bread Pudding

2 tablespoons butter or margarine
1 cup finely chopped onion
1 pound sliced assorted mushrooms OR
1 pound sliced white mushrooms
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup finely chopped parsley
8 ounces French bread, cut in 1/2" slices
6 large eggs
3 cups milk
6 1/2 ounces light garlic-and-herb spreadable cheese
1/2 cup freshly grated Parmesan cheese

Heat oven to 325 degrees. Grease a shallow 2 1/2 quart baking dish.
Melt 1 tablespoon butter in large nonstick skillet. Add 1/2 the
onion and 1/2 the mushrooms; saute over medium-high heat 4 minutes
or until tender and browned. Place in medium bowl. Repeat with
remaining butter, onion and mushrooms. Stir in salt, pepper and
parsley.

Scatter 1/2 the mushroom mixture in prepared dish. top with bread,
slices slightly overlapping. Scatter remaining mushroom mixture
over top. In a large bowl, whisk eggs, milk and cheese until
blended (small bits of cheese may remain). Pour evenly over bread.
Sprinkle with Parmesan cheese. Bake 1 hour or until puffed and
golden brown, and a knife inserted near center comes out clean.
