Spiced Bread Pudding

225 g slightly stale bread
300 ml milk
2 eggs
175g mixed dried fruit
40 g brown sugar
50 g shredded suet
5 ml mixed spice
finely grated rind of 1 lemon

Preheat oven at 350. Grease shallow dish, line the base with
greaseproof paper and grease again. Cut the bread into 1 inch cubes.
Bring the milk to the boil and pour over the bread. Add a pinch
of salt and allow to stand for 15 mins. Lightly beat the eggs and
stir into the bread mixture with the dried fruit, sugar, suet,
mixed spice and lemon rind. Mix well together. Turn the mixture
into the prepared dish and sprinkle with a little nutmeg. Bake for
45 mins. turn out the cooked pudding. If you do it with pastry,
then I would brush the top of the pastry with beaten egg or milk,
then sprinkle with sugar, then bake as directed.
