Banana Bread

2 large eggs
1 c sugar
1/3 c oil
1 c mashed bananas (3-4 lg)
2 t vanilla
1 t baking soda
1 t baking powder
1 t salt
1 t cinnamon
1/2 t nutmeg
2 2/3 c unbleached all purpose flour
1 c yogurt, buttermilk or sour cream
1 c chopped walnuts (optional)

In a medium sized bowl, beat together the eggs, sugar and oil.
Blend in the mashed banana and vanilla. Whisk together and then
sift ( it is important that these be thoroughly combined) the
baking soda, baking powder, salt, cinnamon, nutmeg and flour. Add
all at once to the banana mixture. Mix quickly but thoroughly,
then stir in the yogurt (buttermilk or sour cream) mixing till just
combined. Pour the batter into a greased and floured 9 X 5 X 3
loaf pan. Bake the bread in a preheated oven at 350 for about an
hour. Test with toothpick or cake tester in the center. Tent the
loaf with aluminum foil, shiny side up, after 40 minutes if the
bread begins to brown too quickly. Yield: 12 thick slices.
