Banana Bread 1/2 cup unsalted butter, softened to room temperature 1 cup granulated sugar 2 eggs zest and juice from 1 medium orange (about 1/2 cup juice) 4 bananas, coarsley mashed 2 cups all-purpose flour 1 tsp. baking soda 1/2 tsp. salt 1/2 tsp. nutmeg 1/4 tsp. ground ginger 1 tsp. banana extract 1/2 to 1 cup chopped nuts Preheat oven to 350F. Grease and flour a 9x5 loaf pan, sprinkle some chopped nuts into the bottom of the pan. Mix the flour, baking soda, salt, nutmeg and ginger in a small bowl then set aside. In a large bowl cream the butter and sugar using an electric mixer. Add eggs and beat until fluffy. Add orange zest and orange juice then bananas-beat until combined. Add the banana extract. Add the reserved flour mixture and nuts- mix by hand until well combined. Pour into a prepared pan and bake about 1 hour or until a pick inserted into the center of the bread comes out clean. Remove from oven and cool on a rack for about 10 minutes then turn the bread out of the pan and cool completely. Makes 1 loaf
