Banana Bread

1/4 cup unsalted butter, softened
1 cup granulated sugar
2 eggs
zest and juice from 1 orange
4 very ripe bananas, mashed
2 cups all-purpose flour
1 tsp. baking soda
1/4 tsp. salt
1/4 tsp. nutmeg
1/4 tsp. ground ginger

Preheat the oven to 350F. Grease and flour a 9x5 loaf pan.

In a large bowl with an electric mixer,cream butter and sugar. Add
eggs and beat.

Add the zest, orange juice and bananas- beat to combine.

Mix in the dry ingredients and stir by hand just to combine.

Pour into prepared pan and bake about 1 hour or until a pick inserted
into the center of the bread comes out clean.

Cool in the pan for 10 minutes then turn out onto a rack to finish
cooling.

Makes 1 loaf
