Banana Macadamia Nut Bread
2 cups all purpose flour 3/4 cup sugar 1/2 cup (1 Stick) butter, softened 2 eggs 1 teaspoon baking soda 1/2 teaspoon salt 1 tablespoon grated orange zest 1 teaspoon vanilla extract 1 cup mashed ripe bananas, (2 medium) 1/4 cup orange juice 1 cup flaked coconut 1 jar (3 1/2 oz.) coarsely chopped macadamia nuts or walnuts (3/4 cup)
Heat the oven to 350.
In a large mixer bowl, combine the flour, sugar, butter, eggs, baking soda, salt, orange zest, and vanilla. Beat at low speed, scraping the bowl often, until well mixed, 2-3 minutes. Add the bananas and orange juice. Continue beating, scraping the bowl often, until well mixed, 1 minute. By hand, stir in the coconut and nuts. (Batter will be thick.)
Spread into three greased 5 1/2 x 3 inch mini loaf pans or one greased 9x5 inch loaf pan. Bake the mini loaves for 35-45 minutes or the 9x5 inch loaf for 60-65 minutes or until a toothpick inserted in the center comes out clean. Cool 10 minutes. Remove from the pans, slice, and serve.
Yield: 1 Loaf
