BOSTON BROWN BREAD
1 cup rye flour 1 cup graham (whole wheat) flour 3/4 tsp soda 3/4 cup molasses 1 cup corn meal 3/4 tsp salt 1 3/4 cup sweet milk 1 cup seedless raisins
Sift the dry ingredients together thoroughly. Mic the milk and molasses together, make a hollow in the flour mixture, and pour in the other mixture, beating it well as you do so. Put the batter into greased tins that can be covered tightly (aluminum foil secured with string or a strong rubber band). The tins should be taller than they are wide. Do not fill the tins more than two-thirds full.
Steam the bread for three hours. Be sure that the tins do not rest on the bottom of the kettle; there must be a chance for the water to circulate freely underneath them.
