Carrot Loaf

3 cups all purpose flour
2 teaspoons baking soda
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
4 eggs
2 cups sugar
1 1/2 cups corn oil
1 teaspoon vanilla
2 cups grated raw carrots
1 cup chopped walnuts
1 can crushed pineapple

Preheat oven to 350. In large bowl, sift together flour, baking
soda, baking powder, salt, and cinnamon. In separate bowl, beat
together eggs and sugar until pale yellow; beat in oil and vanilla.
Stir in sifted ingredients. Fold in carrots, walnuts, and pineapple.
Butter and lightly flour a 10 inch Bundt pan or two loaf pans. Pour
batter into prepared pan. Bake 1 hour and 10 minutes or until cake
tester comes out dry.
