Cheddar Date Loaf

Cheddar Date Nut Loaf
8 ounces (about 1 1/2 cups) pitted, chopped dates 3/4 cup boiling water 2 tablespoons butter 1 3/4 cups all-purpose flour 2 teaspoons baking powder 1/2 teaspoon baking soda 1/4 teaspoon salt 1/2 cup sugar 1 egg, lightly beaten 1 cup shredded sharp Cheddar cheese 1 cup walnuts, coarsely chopped
Preheat the oven to 350 F. Grease and flour one 9 1/2 X 5 1/2 inch loaf pan or three 5 3/4 X 3 1/2 inch loaf pans.
In a medium bowl, combine the dates, boiling water, and butter. Set aside to cool to room temperature. In a large bowl, stir together the flour, baking powder, baking soda, salt, and sugar. Add the date mixture and egg. Stir in the cheese and nuts just until blended.
Spoon the mixture into the prepared pan or pans and bake 50 to 60 minutes for the large loaf or 45 minutes for the smaller loaves, or until they test done. Cool in the pan for 5 minutes, then turn out onto a rack to finish cooling. Refrigerate until serving.
