Chocolate Quickbread

3 tablespoons plus 1 1/2 tsp Dutch process cocoa
3 tablespoons boiling water
1 1/2 teaspoons vanilla extract
3 large eggs
1 1/4 cups sifted cake flour
1/4 cup plus 2 T sugar
1 teaspoon baking powder
13 tablespoons softened butter

Boil water, mix with cocoa in a large bowl until smooth. Cool to
room temp., then add vanilla and eggs. Whisk until smooth (this
will take a while, be patient). Mix dry ingredients separately.
Add half of the dry ingredients with the butter, beat until smooth.
Add the rest of the flour mix. Spoon batter into a greased and
floured loaf pan, bake at 350 deg F for 45-60 min (depending on
the size of the pan) until a skewer in the middle comes out clean.
Buttered foil can be placed in a tent over the pan after 25 minutes
if the cake is browning too rapidly.
