Coconut Bread

3 cup all-purpose flour
1 tbsp. baking powder
1/2 tsp. salt
1 cup sugar
1 cup shredded coconut
1 cup milk
1 egg, beaten
1 tsp. vanilla extract

Combine first 5 ingredients; stir well. Combine milk, egg and
vanilla; stir well. Stir into flour mixture. Cover and let stand
20 minutes. Pour batter into a greased 9x5x3-inch loaf pan. Bake
at 325 degrees for 60-70 minutes or until a wooden pick inserted
in the center comes out clean. Let cool in pan for 10 minutes.
Remove from pan and let cool on a wire rack. Makes 1 loaf.
