Corn Cake

1/2 cup margarine, shortening or lard, softened
1/3 cup masa flour
3/8 cup milk
1 1/2 cups fresh corn, coarsely chopped
1/4 cup cornmeal
1/4 cup sugar
1/2 tsp baking powder

Preheat oven to 375 degrees F.

Beat the shortening with a mixer or wooden spoon until creamy.
Add the masa and milk and blend until well mixed. Stir the corn
into the masa mixture. Add the cornmeal to the mixture. Mix well.
Add the sugar and baking powder. Stir everything together with a
spoon until well blended.

Pour the batter into an ungreased 8x8-inch baking pan. Cover with
foil.

Place pan into a larger pan. Set on oven rack, and pour hot water
into the larger pan until water comes halfway up the side of the
smaller pan. Bake for 50 to 60 minutes.

Remove from oven and from water bath. Let rest for at least 10
minutes before serving. To serve, scoop out each portion with a
large spoon.
