Fiesta Corn Bread

1/4 cup vegetable shortening or oil
1 cup all-purpose flour
1 cup enriched yellow corn meal
4 tsp baking powder
1/2 tsp salt (optional)
2 Tbsp sugar (optional)
1 1/2 cups (6 oz) shredded sharp cheddar cheese
8 1/2 oz can cream-style corn
4 oz can hot or mild green chilies drained and chopped
1/3 cup milk
2 eggs, beaten

Heat oven to 400 degrees. In 8 or 9 inch square baking pan or 10
inch ovenproof skillet, melt shortening in oven; tilt pan to coat
bottom evenly. Combine dry ingredients. Add melted shortening
and remaining ingredients; mix just until blended. Pour into
prepared pan. Bake 30 to 35 minutes or until golden brown and
wooden pick inserted in center comes out clean.
