CORNBREAD

4 cups fresh or frozen corn
2 tbs fresh chopped green chili peppers
3/4 cup oil divided
2 bunches chopped scallions
4 eggs
1/4 cup sugar
2 tsp salt
2 cups chopped onions
6 cups corn meal
milk

Combine corn and chilis and saute in 1/4 cup oil for about 6 minutes.
Add the scallions and mix well.Cool. Combine eggs with sugar, salt,
1/2 cup oil, chopped onions and the cornmeal. Add enough milk to
make a batter type consistency (like thick pancake batter).

Pour into a greased oblong pan and bake 350 for 35 to 40 minutes
or tested done. Serves 10
