Cornbread

1 cup yellow cornmeal
1 cup all-purpose flour
2 tablespoons sugar
4 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1/4 cup shortening (I use melted margarine)
1 egg

Heat oven to 425 degrees. Grease square pan, 8x8x2 or 9x9x2 inches.
Mix all dry ingredients. Blend all wet ingredients very well
separately. Mix together and beat vigorously until smooth. (I don't
like leaving it lumpy even if recipes say it's okay). Pour into
pan. Bake 20 to 25 minutes or until golden brown.
