DAMPER

2 cups self raising flour
1/4 tsp salt
1 cup milk (approx)

Sift flour and salt into a bowl. Make a well in the middle and
add about 3/4 of the milk while mixing with a blunt knife (eg butter
knife). Mix till it makes a fairly moist dough, add more milk if
necessary. Place immediately in a well-greased round tin and bake
at 200-220C (400-450F) for 25-30 minutes. Turn out onto a wire
cooling rack and when cool, slice thickly and serve buttered.
