Damper
4 cups self raising flour 1 oz butter 1/3 cup water or more 1 teaspoon salt 1 cup milk
Sift flour and salt into basin, rub in butter, add milk, and water and mix. Put onto greased scone tray and pat out, cook about 20 minuts, or until damper sounds hollow when rapped with knuckles.
(4 cups plain flour and 4 level teaspoons of cream of tartar and 2 level teaspoons bicarbonate of soda can be used in place of self raising flour) The secret of a good damper is quick mixing and a hot oven.
