Date Nut Cake/Bread
1 1/2 lbs dates (remove seeds and cut up)
2 tsp. soda
2 tbs. margarine
2 cups hot water
1 cup raisins
2 cups sugar
1/2 tsp. cinnamon
1/2 tsp nutmeg
1 tsp vanilla
2 eggs
pinch of salt
3 cups flour
2 cups chopped nuts
Grease and flour cake pan. Put dates in a large bowl, add soda and
margarine. Pour hot water on this. Let stand until mixture is soft
and cool. Add raisins, sugar, other ingredients. Mix nuts with
flour and add to date mixture. Beat well, pour into cake pan and
bake in moderate oven (350 F.) for one hour and twenty minutes.
Test with toothpick. May need to bake a little longer. If you use
smaller pans baking time will be shortened.
I usually use two loaf pans for this recipe.
