1 3/4 cups flour
1 tablespoon sugar
3 teaspoons baking powder
1/2 teaspoon salt
1 egg, beaten
1 cup milk
1 tablespoon shortening, melted
Fruit: 2 cups fruit, diced (apple, banana, orange, pineapple)
3 tablespoons sugar
Ham: 1 cup, chopped
Corn: 2 cups, drained
Sift dry ingredients. Combine egg, milk, and slightly cooled
shortening. Mix liquid and dry ingredients just enough to combine.
Add your filling from the list above.
Drop from a tablespoon into deep fat between 365 and 375 degrees.
Turn as soon as fritter comes to the surface. Remove from the fat
when well browned on both sides, about 1-1/2 minutes per side. Set
on paper towels to drain for a moment before serving.
Makes 16 to 20 fritters.
