IRISH SODA BREAD
3 T margarine or butter 2 1/2 c flour 2 T sugar 1 t baking soda 1 t baking powder 1/2 t salt 1/3 c raisins 3/4 c buttermilk (or use 1 T. vinegar, plus enough milk to make 3/4 cup)
Blend flour, sugar, baking soda, baking powder, and salt. Cut in margarine until dough resembles fine crumbs. Stir in raisins and buttermilk until dough leaves sides of bowl. Knead on a floured surface until smooth (about 1 minute).
Shape dough into a round loaf, about 8" in diameter. Cut a cross about 1/2" deep into top of loaf. Bake on a greased cookie sheet at 375 degrees for 35-45 minutes, until light brown.
