Soda Bread
3 c white flour 2 t baking powder 1 t baking soda 1/4 t salt 12 T sweet butter 2 c golden raisins 1 large egg 1/2 c wildflower honey 1 c buttermilk
Preheat 350 F oven.
Soften the raisins in boiling water for 10 minutes, then drain. Sift dry ingredients together. Cut butter into fingernail-sized pieces and cut into the flour mixture until mixture looks the size of shelling peas. Add the raisins and toss until separate and evenly coated with flour.
Beat together the egg, honey and buttermilk until very frothy and rich-looking. Pour into the flour mixture and mix until just moistened. It should be very rough, and not develop any gluten.
Butter and flour a heavy 12 inch round pan. Transfer batter and allow it to fill the pan, but retain a rounded loaf appearance (the first time I made this, I used a 30 X 15 glass baking dish and mounded the loaf in the center). Bake at 350 F for about 55 minutes and then start checking the center every 5 minutes until set.
Serve warm with butter.
