Lemon Bread

1/2 cup butter, softened
1 cup sugar
2 eggs
2 Tbsp lemon juice
1 Tbsp grated lemon rind
1-1/2 cups flour
1 tsp baking soda
1/8 tsp salt
1/2 cup milk

2 Tbsp. lemon juice
1/2 cup confectioners' sugar

Cream butter and sugar. Beat in eggs, lemon juice and rind. Combine
dry ingredients. Stir into creamed mixture alternately with the
milk. Pour into a greased loaf pan and bake at 350 degrees for 45
minutes. Mix glaxze ingredients. Remove from pan and drizzle with
glaze immediately.

This recipe is great. I made mine with 1/2 applesauce & 1/2 butter to cut back on fat. It turned out great. I also used 1/2 the sugar & will be using honey next time. I will make this with more lemon juice, as I like the zing of lemon.
