BASIC BREAD
100g ground almonds/almond flour
2 eggs
1 tsp baking powder
25 - 50g butter - to taste
1 tbsp olive oil
1 tsp each salt&pepper - to taste

VARIATIONS
+ sauteed onion, leek, mushrooms, bacon or smoked salmon...
+ 1 tsp of any herbs you like
+ spices to taste - chili, paprika, turmeric
+ grated Parmesan, mozzarella or any cheese
+ double cream, sour cream, cream cheese
+ olives, sun-dried tomatoes,
Add any combination of the above to your own taste. The above basic bread quantities will accommodate approximately one small onion a handful of small mushrooms, 1/2 - 1 cup of cheese. The mixture can be doubled, tripled, and so on...

METHOD
Heat the oven to a high temperature (gas 7/220C/425F).

IF SAUTEING - Put the butter and oil in a large frying pan. Finely slice or chop whatever you wish to saute, onion, mushrooms, etc.

Mix almonds with baking powder (and whatever dry ingredients you're using - herbs, spices, etc.)

Make a well and beat in the eggs (and cream at this stage, if you're using it).

Add the rest of the ingredients - if you're making the basic bread melt the butter before adding. Mix just to combine.

Well grease an oven proof dish or tin - loaf, pie, cake or tray. Spread the dough to 1cm - 3cms thick. At this stage you can press lumps of cream cheese into the surface, sprinkle with olive oil or grated cheese or both, sprinkle with herbs or spices... whatever you like.

Bake for 10 minutes.

Eat hot or cold... whole plain bread is about 10 carbs. Don't forget to add carbs for added ingredients.
