Oatcakes 1 qt. (4 cups) old fashion rolled oats 2 cups flour 1 tsp. baking soda 1 Tbs. salt 2 Tbs. sugar 1 cup bacon grease 1 cup hot water Preheat oven to 400 deg F (205 deg. C).
In a large mixing bowl mix dry ingredients together reserving 1/4 to 1/2 the flour for later use.
Mix in the bacon grease mixing very well. Mix in hot water quickly or the product may be tough.
Using reserved flour and waxed paper roll dough out thin like a pie crust, place on a cookie sheet and bake for 12 to 15 minutes, until golden brown. The product should come out cracker like. Too much softness in the center means you are not rolling the dough thin enough.
When cool enough to handle break into managable sized servings & enjoy with butter and your favorite marmalade, or jam.
