Pear-Nut Bread
1/3 cup unsalted butter, softened 3/4 cup sugar 2 eggs 1/2 to 1 tsp. almond extract 2 cups flour 1 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 1/4 cup buttermilk 1 1/2 cups peeled cubed fresh ripe pear 1/3 cup chopped walnuts 1/3 cup chopped pecans 1/3 cup chopped filberts
In large mixer bowl, cream butter and sugar until light and fluffy. Beat in eggs and almond extract. In small bowl, combine flour, baking powder, baking soda and salt; add alternately with buttermilk just until well combined. Stir in remaining ingredients.
Spoon into greased 9" x 5" baking pan. Bake in a preheated 350 degrees F oven until golden brown and wooden pick inserted in center of bread comes out clean (60-65 min.). Cool 5-10 min.; remove to wire rack to cool completely. Amount: 1 loaf (12 slices)
