Popovers
1 cup regular all-purpose flour 1/4 teaspoon salt 1 teaspoon sugar (optional) 1 tablespoon melted butter or salad oil 1 cup milk 2 large eggs
In a bowl, mix flour with salt and sugar. Add butter or oil, milk, and eggs, and beat with a mixer or blender until very smooth, about 2 1/2 minutes.
Fill greased baking cups about half full with the batter. Bake on center rack of oven until well browned and firm to touch-in a hot oven (400') for about 40 minutes for a richly browned shell with a fairly moist interior, or in a moderately hot oven (375') for 50 to 5 5 minutes for a lighter-colored popover, drier inside. (Keep oven door closed; popovers are extremely susceptible to collapsing if a draft of air hits them just as they are swelling above the cup, usually about 3/4 of the way through the baking time.) Remove from pans and serve hot.
If you like the interior of the popovers to be especially dry, loosen from pan but leave sitting at an angle in cups; prick popovers sides with a skewer and let stand in the turned-off oven, door slightly ajar, for 8 to 10 minutes.
Note: High Altitude changes: 1 1/14 cup milk and 3 large eggs
