Pepper-Chive Popovers Yield: 12 small or 9 large popovers.
1 cup all-purpose flour 3/4 teaspoon salt 1/4 teaspoon freshly ground pepper 1/3 cup chopped chives 2 eggs, lightly beaten 1 cup low-fat milk 1 tablespoon unsalted butter, melted, plus additional for greasing the pan
Preheat oven to 450 degrees. Stir together the flour, salt, pepper and chives in a medium-size mixing bowl until well combined. Add the eggs, milk and butter and stir with a fork just until mixed.
Grease a 12-cup muffin tin or 9 5-ounce custard cups and divide the batter among the cups. Bake for 15 minutes. Lower the heat to 350 degrees and continue baking until the popovers are browned and cooked through, about 20 minutes longer. Serve immediately.
