SCOTCH POTATO SCONES

3 c biscuit mix 1/4 c sugar 2 eggs 1 c warm mashed potatoes 2 tbsp. margarine 1 egg white, slightly beaten (optional)
Mix all ingredients together into a soft dough. Knead about 5 times. Roll to 1/4 inch and cut 2 1/2 squares. Brush with melted margarine. Fold over to make a triangle, pressing edges lightly to seal. Place on baking sheet and brush with egg whites. Bake at 400 degrees for 10 minutes or until brown. Mix all dry ingredients. Cut in shortening until cornmeal consistency. Store with tight lid in glass container at room temperature.

6 c flour 3 tbsp. baking powder 1 tbsp. salt 1 c shortening
