Pumpkin Cranberry Bread
Makes 2 loafs

2 1/4 cups all-purpose flour
1 T pumpkin pie spice
1 t baking soda
1/2 t salt
2 eggs
2 cups sugar
1/2 cup vegetable oil
1 cup solid pack pumpkin
1 cup cranberries, chopped

Preheat oven to 350F.

In a large bowl, combine flour, pumpkin pie spice, baking soda and
salt. In a small mixer bowl, beat eggs; beat in sugar, oil and
pumpkin. Pour this pumpkin mixture into the dry ingredients; stir
just until moistened. Stir in cranberries. Spoon batter into two
greased and floured 8x4 inch loaf pans.

Bake for 60 minutes or until wooden pick comes out clean.

Cool 5 to 10 minutes; remove from pans.
