Spinach Bread
1/2 cup butter
1 cup flour
1 tsp salt
1 to 1 1/4 tsp baking powder
1 lb Monterey Jack cheese, grated
1 cup milk
3 eggs
4 cups fresh spinach, cleaned (uncooked)
Melt butter in 9 x 13 pan in low oven. Beat eggs. Add flour, salt,
baking powder, and milk to eggs and stir. Add spinach and cheese
to this mixture. Stir until everything is moistened. Spoon into
pan over melted butter and bake in 375 oven for 30-35 minutes.
Make ahead and reheat or freeze.
To reheat after freezing, bring to room temperature and heat for
20 minutes at 350.
