Southwest Spoonbread

8oz box corn muffin mix
1 cup sour cream
4 oz stick margarine (softened)
2 eggs
8oz can corn kernels (drained)
8oz can creamed corn
4 oz can diced Jalapeno chillies (drained)

Lightly beat eggs. Beat in sour cream and margarine. Fold in
corn, creamed corn and Jalapeno chillies. Fold in corn muffin mix.
Pour into a buttered baking dish. Bake at 350F for 35-40 minutes
until lightly brown. Enjoy warm or cool. Great as a side dish with
barbecue.
