Ultimate Corn Bread

You must use a deep iron frying pan for this. It is a very moist corn bread.

1 egg
1 1/8 c. milk
1 1/4 c. corn meal
1/4 c. flour
3 tsp. baking powder
3 T. shortening
1 T. shortening
1 diced medium onion
A couple of diced Jalapeno peppers(optional)
1 regular container of sour cream
tooth pick

Preheat oven to 325-350 degrees F. Grease cast iron frying pan with 1T. of shortening. and heat on top of the stove but do not scorch. Mix all ingredients together and stir until smooth. Pour batter into hot frying pan. Place pan in the oven and bake for about 45 minutes until a tooth pick inserted in the middle is clean (no batter) when pulled out. Remove from oven and place a clean dish towel on top of pan and quickly flip pan upside down on a cutting board to remove bread. You may need to bump the pan on the board to loosen the bread if it is was not greased well enough. Set pan aside. Bread should be golden brown on the pan side. Serve hot.
