Yorkshire Pudding

1 1/4 cup flour
1/2 tsp salt
1 cup milk
1 Tbsp butter; melted
2 eggs
4 to 8 Tbsp drippings from roasting pan

Preheat oven to 475 degrees. Whisk flour, salt, milk, butter and
eggs together. With a baster, drop a teaspoon or two of drippings
into each cup of muffin tin. Put muffin tin in preheated oven.
When drippings are sizzling hot, remove tin and fill each cup
1/2-2/3 full with batter. Bake 15 minutes; reduce oven temperature
to 350 degrees; bake 15-20 minutes longer until popovers are puffed
and brown. Serve hot. Yields 12 large popovers.
