Zucchini Bread
3 eggs
2 cups sugar
3/4 cup oil
1 teaspoon vanilla
2 cups grated zucchini
2 cups plain flour
1 teaspoon cinnamon
2 teaspoons baking soda
1 teaspoon salt
1/4 teaspoon baking powder
1 cup nuts, chopped
Combine eggs, sugar, and oil; blend well. Combine dry ingredients
and add to egg mixture along with zucchini. Add vanilla and nuts;
mix together. Grease and flour 2 loaf pans. Bake for 1 hour at 350
degrees F.
