Zucchini Bread

3 eggs
1 1/2 c sugar
1 c oil
1 tb vanilla
4 ts lemon juice or vinegar
2 c zucchini unpeeled, grated
2 c unbleached all-purpose flour
1 c whole wheat flour
1 ts salt
1 ts baking soda
1/2 ts baking powder
1 tb cinnamon
1 c walnuts, chopped
1/2 c to 1 cup raisins soaked in boiling water, to cover, drained

Beat eggs till light and fluffy. Slowly add sugar while continuing
to beat. Stir in oil, vanilla, and lemon juice or vinegar. Add the
zucchini and mix thoroughly. Sift together flours, salt, soda,
baking powder, and cinnamon, and stir into zucchini mixture just
until moistened. Fold in nuts and raisins. Pour into 2 greased
8-inch loaf pans and bake in a preheated 325 degree oven for 1
hour.
