Zucchini Loaf

3 eggs, beaten lightly
1 cup vegetable oil
2 cups zucchini, grated and drained
1 1/2 cups sugar
2 tsp vanilla
2 cups flour
1/4 tsp baking powder
2 tsp baking soda
3 tsp cinnamon
1 tsp salt
1 cup raisins
1 cup walnuts

In large bowl beat eggs lightly. Stir in vegetable oil, zucchini,
sugar, and vanilla. Sift together flour, baking powder, baking
soda, cinnamon and salt. Stir into egg mixture until blended.
Stir in raisins and walnuts. Pour into 2 greased loaf pans. Bake
at 350 for approximately one hour.
