Biscuits makes 10
2 cups soft winter wheat flour (such as Red Band or Lily) 1 tablespoon sugar 1 1/2 teaspoons baking powder 1/2 teaspoon baking soda 3 tablespoons solid vegetable shortening, or 1/2 stick unsalted butter 1 to 1 1/8 cups buttermilk 2 tablespoons lightly salted butter, melted
Preheat oven to 475 degrees. Grease an 8 inch round cake pan. In a medium bowl, mix together 1 1/2 cups of flour, sugar, baking powder, baking soda, and salt. Cut in shortening, or work with fingers until lumpds are no larger than small peas. Stir in milk until dough is wet, let stan 2 to 3 minutes. Dough will be very wet. Pour remaining flour onto rolling board. Flour hands. Using an ice cream scoop, scoop about two tablespoons of dough into flour. Pick up dough and gently shape into a soft round by passing back and forth in hands. Place into prepaired pan, repeat. Brush tops with melted butter. Bake in preheated oven for 16 to 18 minutes.
